What are boutique patisserie and custom-designed products?
It encompasses custom-designed cakes and products that are personalized according to the customer's special request, featuring figures/handmade flowers or working on a different dimension of the cake design to bring together both taste and visual appeal.
The most fundamental characteristic of this field is the creation of artistic cakes where everything you imagine comes to life visually.
So, how do you create such a cake? First, we start with the very basics, namely the cake and fillings. We begin the first stage of training with a delicious cake recipe suitable for working with sharp-edged cakes.
In the training, we work on the plain cake recipe, which is the most basic recipe. The goal is to build a suitable structure for a sharp-edged design while ensuring our base is firm and also transforms into a feast that leaves a lasting impression on the palate. In the second stage, we touch upon very technical aspects such as how to make ganache in the correct proportions, which brand of chocolate to use, and why. We discuss what pastry cream is and how to diversify it, and how to make our own pastry cream at home, then immediately move on to application.
Our cake is baked and sliced, all preparations are complete, and we have layered our cake. Now comes the most technical part: for our cake to be finished with ideal craftsmanship, every step must be completed correctly and in supporting stages. For example, if you want your cake to be perfectly smooth and sharp-edged after covering it, your ganache coating must also be excellent. Don't worry, you will be in a training program where you will learn the correct techniques, and we will explain every detail to you.
We have reached this point; see, we are about to complete a wonderful cake step by step. Now we come to working with sugar paste. If you work with the right techniques, sugar paste designs offer a world without limits to your imagination, an endless world in terms of working techniques and visual diversity. Of course, you don't have to use sugar paste, but if you want to be a boutique pastry chef, you need to learn its fundamentals and be at a level where you can fulfill future orders.
Your cake base is ready, and you are prepared to roll out your sugar paste and cover it. Here, we will teach you Mine Keskin's special covering techniques that will make your work easier, allowing you to create a cake that is both very easy and perfectly smooth.
So, our cake is finished and covered, how do we decorate it?
In this section, we explain how to create 2D decorations in the most practical way. With this technique, you will be able to create any design you wish, whether for adult, child, female, or male cakes. If you have some manual dexterity and remember craft lessons, we can say this is a very enjoyable part.
At this stage, there are many details such as colors and brushes, the use of edible paper, and making edible flowers with this paper.
At the end of the training, we discuss taking photos of our cake and what we pay attention to. This part is now the most fun stage. We go over all the delicate and important information such as storage, packaging, and transportation conditions, and then load your cake, made with your own hands, into your vehicle :) You can taste it with your loved ones at home, I hope you had a lot of fun.
